How did you get into nutrition?



I have been asked this question a few times and my reply sounds a little something like this:

I was in school to become a doctor but started to realize that I wanted to help people more than most doctors do.  I wanted to take my time and get to know people.  I did not want to become a slave to the pharmaceutical companies (from my knowledge, many doctors get put though school with their aid).  As I was in school, I worked at a vitamin store where came across and helped many different people use alternative supplements and vitamins to help with their ailments.  Most of supplements actually worked better than the prescriptions with far less side effects, if any at all.  I decided that the last thing I wanted to do was to go to school to be able to prescribe those medications that I had been working so hard to get people off of.  Not to mention that its crazy expensive to go to med school.

The one on one counseling experience that is got at the vitamin store had a great deal to do with my choice to change my major and career choice.  I changed to nutrition because eating the right food is the best answer for good health.  I started to understand that vitamins were a gateway into educating people about changing their health through eating the right foods and supplements.  I found out and that the foods people eat are either making them worse or making them better.  Its sounds too simple to be true right?  Wrong…people make a decision for health or sickness every time they put something in their mouth or on their skin.

These finding have fueled me to help more and more people through my knowledge of supplements and foods to get people to feel their best.  Most people don’t even know what it feels like to not have any pain or inflammation inside the body.  This inflammation can show itself in many different ways such as allergies, feeling bloated, having irregular bowel movements, tiredness, lethargy, joint pain and so many more.

Have you heard of the term monoculture? Well mono means ‘one’ and monoculture means to cultivate just one kind of something. I have been researching the different types of monoculture in our food systems today and was quite shocked at what I found out.

Did you know that there are about 1000 different kinds of bananas? They vary but color, taste, texture and smell. Some last a long time on the shelf and some need to be eaten as soon as they are picked. Some taste like other fruits and some like nothing you have ever tasted before. Some grow at different climates and temperatures but mostly they like the tropical weather.


Did you know how many different species are shipped to the United States for us to eat? Usually just 1…1 out of many hundreds. Why, you might ask. Because there is only one that can be picked green and shipped across the world to ripen on the shelf and still taste good. Most bananas get to soft and rot before arriving at their destination. Banana growers only ship this one kind of banana so therefor they need to grow ONLY this one kind of banana. This is where the term monoculture comes in. Since they are growing only the one kind of banana that ships well, there is not room for the other bananas that don’t ship well so they are being cut down and some of those species are lost forever.

Why is that a problem…you might ask. There are a couple of reasons. The first is diversity in the foods that we eat have made us who we are today as humans. Trying different species, colors and tastes have evolved our brains and most of all our taste buds. Differences in foods also provide different vitamins and minerals which are essential for us to thrive as humans.

The second and I feel the biggest reason that monoculture is bad is in the evolution of species to protect themselves from things that kill it such as bugs, viruses, and bacteria. If there is one species of bananas, in this case, that is favored by the bugs and destroyed then you loose only that ones species. If there are many different kinds that are being grown then it is not bad because there are other species that will be untouched by the bugs. But in the case of monoculture if you have a bug that evolves to like the only banana species that we grow then it will cause total devastation and the loss of that food all together.

Scary huh? And this is only bananas that I am talking about here. We, as humans, have done this to most of the fruits and vegetables that you find in the supermarket. Why do I point this out? No it’s not just to scare you but it’s to inform you that we need to take our food back into our own hands and chose to eat many different types. How? By shopping closer to home and from a local farmer, or better yet grow your own food. The more you take responsibility for your own health/food the better.

I have started growing my own food recently and love it! I bought a tower garden from juice plus and have never looked back. No I’m not the best and yes I have killed some stuff but the fact that I am trying makes all the difference.

I like the tower garden because it is transportable if your not living somewhere that you can have an in ground garden plus it uses 90% less water (a precious commodity). I love that it trickles like a water fountain too 🙂

If your not there yet and want someone else to grow your food check online and find your closest farmers market, it is well worth your time and energy, I promise. Also look for things you have not tried yet…stuff that you have never seen before. The more diverse foods you eat the better your health.

Jump with me!


Have you ever jumped out of an airplane?  Well I did yesterday and it was so much fun! I have put together the most amazing moments so you can feel like you are jumping with me.  Its a great way to experience it even if your not the type to jump yourself 🙂 Don’t worry, you can live vicariously though me, I don’t mind ;).

Normally I talk about nutrition on my blog but I also feel that nutrition includes enjoying life and having fun.  So today, I added something to my ‘Gotta Do Before I Die’ list and jumped out of a perfectly good airplane.  It was amazing and was the closest thing to really flying that I have ever experienced.

Someone asked me if I was nervous…Are you kidding me?  You have got to be crazy to not be nervous about doing something for the first time..especially jumping out of a plane at all little above 10,000 feet.  I was not as nervous until Tim (my tandem buddy) said we are at altitude and its time…give the door a little push.  So it did and the thing flung open with vigor.

That was the most nerve wracking part.  We stepped out on the tiny ledge (and I mean tiny–i think only one of each of our feet fit on it).  And jump…more like let go and fall.

If you look closely…my legs are tucked up into the fetal position and my eyes are full of wonder.  This is what it feels like to be birthed into the world of the unknown…cover all your vital parts and go! 🙂 And this is when the screaming started…



I wanted to flip as we left the plane and so we did.

Yup…still screaming.  I think by this time my legs were not still tucked at my chest though.  Free falling or rather plummeting to the earth as the terminal velocity of 120 miles an hour (Thank you Josh for the calculations).

So much fun that I’m throwing the hang-loose and I love you sign at the same time 🙂



And then the free fall was done….about as quick as it started.  The fall was about 40 seconds in total and worth every second.  Then with a quick jerk, we slowed our decent.  The scenery was still just as awe-inspiring or more so actually because it was moving a lot slower.



I even got to steer us around.  Pull one handle and turn that direction…if you pull hard enough you flip around in circles (one of the best parts! )


It was strange…as soon as I had the controls in my hands the screaming stopped 😉 can anyone say control freak haha



And a shot of my beautiful and life saving parachute 🙂 I had watched them pack this exact parachute before we jumped so I even got to pick the color 🙂



We made it! Safe and sound with the exception…oh never mind…we won’t talk about that…

Kidding! Everything went great and these people were pros!

Now for the happy dance!! All in all this was one of the most amazing experiences that I have ever done and I have a feeling that it won’t be my last.  If it is something that calls to you then DO IT and it not…like I said at the beginning you can live it though me 🙂

Dry on the Outside, Dry on the Inside!


“If your dry on the outside, then your dry on the inside”

Someone told me that a long time ago and it really suck out in my head, “Dry on the outside, dry on the INSIDE”

It made me start thinking…could there be something to that?  Then I started noticing things about myself…that when I looked down at my skin and it was dryer than I wanted it to be, I had not drank enough water that day.  Sometimes I didn’t remember drinking water at all some days…oops.

Did you know that you are supposed to drink at least 2 liters of liquids, preferably water, a day?  How much is that and how can you drink that much water?

Some tricks I use:

  • Drink a big glass of water as soon as you wake up in the morning.  Maybe even add some lemon or apple cider vinegar for extra detoxing.
  • Carry a water bottle with you, if you have it with you its hard to say ‘out of sight, out of mind’.  A glass water bottle is best for your health and the plant (see blog)
  • Drink a large glass before dinner, it might even make you eat less dinner thus get fewer calories right before bed.

These are some helpful hints to keep you hydrated and looking good.

Did you know the skin a good mirror of the health on the inside our bodies…if your skin looks healthy and vibrant then your insides probably look good.  But if your skin is dull in color, dry, wrinkly, not soft, smooth and full of life then your insides probably look the same.

Your gut health is responsible for your overall health.  We take our guts for granted as humans and throw whatever we want at it, whatever tastes good at the moment.  But are we just satisfying our tongues and not actually fueling our bodies?  What is that soda doing for your health?

This is one thing I focus on when working with clients is to fix their relationship to food.  Food and water are things that should be enjoyed with love, not hated or resented.  Most importantly food should be eaten for a reason, to nourish and help heal the body and not just to subside that hunger feeling.  Water should be drank to keep us hydrated and help the body rid itself of toxins.

That…is good for the immune system?

That catchy tune has a story behind it…the reason that beans make you toot is because of the fiber in them.  Releasing gas (or tooting) is really good for you because it is a sign that you are eating foods that feed the good bacteria in your colon. Gas is good, smelly gas is not…the trick that I use is to eat lots of green vegetables high in Chlorophyll or take a Chlorophyll supplement to stop from stinking.


One of the best things you can do for your immune system is to eat foods that are high in fiber.  A major source of fiber is found in fruits, vegetables and beans. Vegetables and beans would be the best because they have less sugar than fruits. All the different types of veggies are important though so make sure to eat a wide variety .


The immune system really starts in the gut and is linked to the health of your digestive system.  The Standard American Diet (SAD) is high in refined and processed foods and low in fiber which may be linked to higher chronic disease occurrences.


Why is fiber so important for your immune system?

  • Helps with digestion so you feel less bloated
  • Helps with weight loss
  • Speeds up and slows down your digestive system when needed
  • Removes unavoidable toxins from your body

What a full meatless monday looks like


Happy Meatless Monday everyone.  I wanted to walk you through my meatless monday last week as a good example of what you can do to plan out your day so you are not eating meat for one whole day a week.


first start by cutting up some veggies (every thing is better with some color).  This is yellow and red bell pepper, green onions, and a couple of pickled mushrooms that I got from the farmers market.


Then add some good fresh eggs to the pan with a little coconut oil so they don’t stick and vuala.  You have a protein packed, nutrient packed breakfast without meat (or wheat).



I stopped by Paradise Bakery and got one of their new broth bowls.  This is lentils, quinoa, spinach, kale, red peppers, and topped with a hard boiled egg and lemon slice.



Guess what more veggies! I had dinner with a few friends and it came out amazing.  We did three different dishes: Quinoa salad, sautéed broccolini, and Stir fry veggies (onions, squash, and kale).  This is my plate about half way through (forgot to take a picture at the beginning..oops)


Notice the size of the plate, its the size of a salad plate.  The bigger the plate the more food you tend to put on it.  You can put the same amount of food on a big plate and your brain tell you that it is not enough food.  If you use a small plate it will satisfy your brain and your belly without getting way to much food or calories.

Wheatless Wednesday

Why Wheatless Wednesday?
How much wheat do you eat?  Everyday or every meal?
Im sure you have seen all the packaging and people talking about Gluten free this and Gluten free that. Gluten is the main protein found in wheat products.  Wheat or Gluten is found in breads, pastas, cakes, crackers, cookies, and basically anything with wheat flour in it.  It is also found in most processed foods.  We over consume wheat products as a nation so wheatless wednesday, similar to meatless monday is to bring awareness to the subject.
Did you know by consuming wheat everyday or every meal can actually cause you to become allergic to it? Its true.   It is quite common for people who eat the Standard American Diet (SAD) to have an inflammed gut.  Over consuming certain ingredients such as wheat when your gut is inflammed can cause large particals to pass through into the blood stream.  After these large particals get absorbed into the blood stream the body doesn’t recognize them so it starts to create anti-bodies against them.
The creation of anit-bodies is an amazing mechanism of the body to keep us healthy and protect us from harmful bacteria and viruses.  By creating anti-bodies against them it can help the body to easily identify and get rid of the bacteria or virus when it is encountered again.  In the case of over consumption it is food that the body starts to reject or attack causing an allergy to form.  This reaction starts a vicious cycle of more inflammation in the gut and compounding the problem even more.

Meatless Monday

Why Meatless Monday?
Have you ever stopped and thought about how much meat you eat? Do you eat it everyday?Every meal?  To be quite honest with you,  I stopped and thought hard about that question a little while ago and came to a “yes” answer in my head.  If you did the same thing then answer me one question….why?
To get enough protein right?  We all think that we need more meat to get enought protien in our diets but the fact is that vegetables, bean and rice, hummus, nuts, hemp, and quinoa are great sources of protein as well.  But by all means that does not mean that I want you to stop eating meat. I would just like you to go one day a week without it, or even one meal…I’m not asking you to do anything crazy but one day a week is feasable right?
It can improve your health or at least awareness of the amount of meat you consume on a daily basis.  The typical american eats meat at every meal and usually way more than they need for the whole day.  Lets bring awareness to the front of your brain and to those around us.  Did you know that if we all stopped eating meat for one day we would decrease CO2 emissions 18%?
This is when I created Meatless Monday! Its one day a week or one meal that you choose to not eat meat.  Start small if you need to, any changes are still changes in the right direction.  Please Share and spread the word of eating healthy to your friends and family and tag me @fuelyourbody, @NikkiGolly and #meatlessmonday on your post 🙂 Lets improve our health as well as our families.

Healthy Breakfast- on the go!


If you are like me it is really hard to get out of bed and get going in the morning, especially to eat a good breakfast too. Here is one of my go-to’s for an easy on the go, out the door, breakfast.

Chia pudding with nuts:


  • mason jars w/ lids (medium sized)
  • honey or agave nectar
  • nuts (almonds, walnuts, or pecans)
  • chia seeds
  • Coconut or Almond Milk
  • Rolled Oats
  1. In each mason jar fill 3/4 with Coconut or Almond milk. I make it a little different each time to change it up a bit.
  2. Add 3 Tablespoons of Chia seeds to each jar.
  3. Add 1 Tablespoon of Honey, agave or preferred sweetener
  4. Add a few nuts of choice.
  5. screw on lid and shake well…make sure the chia seeds are not sticking together or to the bottom.
  6. If you like soft oats…add about 4 tablespoons now or if you like them on the chewier side add them the next morning right before you eat it.
  7. After you shake each one up good, place in the refrigerator overnight.

Vuala! you have an instant on the go breakfast that fills you up, with good protein, fiber, omega-3’s, and good complex carbohydrates!  I just grab one of these and drink it right out of the jar on my way to work.  Now is that easy enough or what? Excuses be gone!

Wheatless Wednesday Apple Pie


Fall is one of my favorite times of year and especially since apples are in season. This is a great alternative to apple pie and tastes great with less calories, less fat and its wheat free!

Baked Apples necessities:
*4 apples
*1/4 cup raisins
*1/4 cup chopped pecans
*1 Tbs hemp hearts
*1/4 cup brown sugar
*1/2 tsp cinnamon
*1/4 tsp nutmeg
*pinch of cardamom
*coconut oil for top
